
This is a recipe that I have wanted to make for a while. I got this amazing recipe from a locally produced cookbook The Whole Life Nutritional Cookbook. It’s a local couple who have created an incredible collection of recipes which are easy to make as well as wholesome, nutritious and gluten-free!
This is a recipe that you can eat guilt free, its gluten, dairy, soy, sugar and nut free recipe. This recipe is also prepared raw, eating raw food is great way of supporting the flora in your gut. Sunflower seeds, dates, cinnamon and coconut all generate warmth which assists in healing the gut.
This is such a simple recipe there are only 6 ingredients total. I only had sweetened coconut in my pantry but that is the benefit of this recipe that it’s easy to substitute ingredients. You can also change the flavor of the truffle by using pecans, almonds, or cashews.
Raw Cinnamon-Sunflower Truffles
*You’ll need a food processor to make these.
2 cups raw sunflower seeds
2 tablespoons ground cinnamon
1/8 teaspoon sea salt
1 cup pitted medjool dates
2 tablespoons extra virgin olive oil
2 tablespoons dark agave nectar or maple syrup*
unsweetened shredded coconut
Place the sunflower seeds, cinnamon, and sea salt into a food processor fitted with the “s” blade. Process until seeds are very finely ground. It only takes a minute or so.
Then add the pitted dates and olive oil. Process again until combined and sticky. Only add the agave or maple syrup if need be. Your dates may be moist enough and you might not need extra sweetener. Check to see if you can form a truffle by rolling some of the mixture in your hands. If it falls apart then add the sweetener and process again.
Scoop out the sunflower mixture by the large spoonful and roll into balls. Then roll in shredded coconut. Refrigerate before serving, you can store these in the fridge for up to 10 days.
